Savory Scramblers - cooking recipe

Ingredients
    Nonstick spray
    3 medium eggs
    Egg substitute to equal 3 eggs
    1/4 cup freshly grated Parmesan cheese
    1 Tbsp finely chopped garlic
    1-1/2 Tbsp fresh dill weed
    1-1/2 Tbsp fresh chives
    1-1/2 Tbsp fresh flat-leaf parsley
    1 Tbsp chopped sun dried tomatoes
    4 large lettuce leaves (optional)
Preparation
    Spray a skillet (preferably nonstick) with the nonstick spray.
    Mix the 3 medium eggs with the egg substitute. Combine that mixture with the Parmesan cheese, garlic, dill, chives, parsley and tomatoes. Place the prepared skillet over medium heat and carefully pour in the egg mixture. Turn the egg mixture gently with a spatula as it cooks. As the eggs begin to set, stir them a few times until they are firm. (Because of safety concerns, it is not a good idea to serve runny eggs.) Divide the eggs into four attractive serving dishes. Place a lettuce leaf under each serving, if you wish.
