Fresh Tomato Soup(Mom'S Summer Recipe) - cooking recipe

Ingredients
    1/2 sliced onion
    3 c. fresh cut up tomatoes
    1/2 tsp. salt
    1/2 tsp. pepper
    1 Tbsp. parsley
    1/4 tsp. dried basil
    1/4 c. rice
Preparation
    Place
    tomatoes and onion in large saucepan.
    Cover and bring to
    a
    boil.
    Add
    seasonings
    and
    simmer
    for 1 hour. Remove from heat and pass through a strainer or press.
    Place strained tomatoes
    and
    all
    juice in saucepan.
    Simmer for 1 hour.
    Add 1/4 cup to 1/2 cup uncooked rice to soup and simmer until rice is overcooked.
    Makes 4 to 6 servings.
