Sweet Potato Crisps - cooking recipe

3 large sweet potatoes (about 2 lb.), peeled
vegetable oil (for deep frying)
salt to taste
Preparation

Using vegetable peeler, cut potatoes into paper thin strips. In a 12-inch skillet over medium heat or in an electric skillet, heat 1-inch vegetable oil to 400\u00b0 (see note).
Drop handful of potato strips into hot oil; fry about 2 minutes until crisp and golden.
Using slotted spoon, remove to paper towels to drain. Repeat with remaining potatoes.
Sprinkle lightly with salt to serve.
Makes 6 servings.
