Barbecue Brisket - cooking recipe

Ingredients
    1 beef brisket
    3 oz. liquid smoke
    celery, garlic and onion salt
    pepper
    Worcestershire sauce
Preparation
    In large roast pan, place brisket.
    Pour liquid smoke over brisket, generously sprinkle both sides with celery, garlic and onion salt.
    Cover and refrigerate overnight.
    Next day, sprinkle both sides with pepper and Worcestershire sauce; cover and cook. Trim excess fat from brisket.
    Cook 5 hours at 275\u00b0, uncovered and pour 3 ounces barbecue sauce on meat.
    Cook 1 hour, uncovered. Remove meat to platter and sauce.
    Cool.
    Skim fat.
    Mix 2 tablespoons flour with 1/2 cup water, stir into meat sauce.
    Add more barbecue sauce to taste, slice brisket and serve with piping hot sauce.
