Nicole'S Vegetable And Chicken Stir-Fry - cooking recipe

Ingredients
    3/4 c. chicken broth
    2 tsp. cornstarch
    3/4 to 1 lb. boneless skinless chicken breast
    1 Tbsp. soy sauce
    2 tsp. vegetable oil, divided
    2 c. fresh broccoli
    1 red pepper, cut in strips
    rice or pasta (whichever you prefer)
    1 yellow pepper, cut into strips
    1 green pepper, cut into strips
    1 c. fresh mushrooms
Preparation
    Mix broth and cornstarch; set aside.
    In medium bowl, combine chicken strips, soy sauce and 1 teaspoon salt.
    Heat one tablespoon oil in large skillet over medium heat.
    Add chicken mixture.
    Stir-fry 2 to 3 minutes or until done.
    Remove chicken from skillet to serving dish.
