Zucchini Stuffing Casserole - cooking recipe

Ingredients
    6 to 8 c. sliced zucchini
    1/2 c. chopped onion
    3/4 c. shredded carrots
    4 Tbsp. butter
    1 1/2 c. herb stuffing cubes
    1 can cream of chicken soup or cream of mushroom soup
    1/2 c. sour cream
Preparation
    Cook zucchini in salted water until tender.
    Drain.
    Saute onion and shredded carrots in butter until tender.
    Stir in stuffing cubes, soup and sour cream.
    Stir in zucchini.
    Add mixture in 2-quart casserole.
    Top with an additional 3/4 cup stuffing and 2 tablespoons butter.
