Smoked Pork Tenderloin With Molasses Barbecue Sauce(Recipe From "Eating Well" Magazine) - cooking recipe

Ingredients
    2 tsp. olive oil
    1 small onion, finely chopped
    1 jalapeno pepper, seeded and minced
    1 clove garlic, minced
    1/2 c. molasses
    1/2 c. cider vinegar
    1/4 c. Dijon mustard
    1 Tbsp. reduced-sodium soy sauce
    2 3/4 lb. pork tenderloins, trimmed of fat and silver skin
Preparation
    The earthy sweetness of molasses goes exceptionally well with pork.
    It's recommended that the pork be smoked over pecan shells or hickory chips and finished on the grill to crisp the exterior. This is delicious served hot or at room temperature, accompanied by Mango Salsa (recipe follows.).
