Fresh Tomato Juice - cooking recipe

Ingredients
    4 lb. fully ripe tomatoes
    1 Tbsp. minced onion
    3 fresh basil leaves
    2 peppercorns, crushed
    1 tsp. salt
    lemon slices or tiny leafy celery ribs
    celery salt
Preparation
    Wash tomatoes; remove cores and cut into quarters.
    Put in stainless steel kettle with onion, basil, peppercorns and salt. Simmer over low heat, stirring often and mashing tomatoes to soften to a juicy mush.
    Put the mixture through a food mill.
    If you want a thinner juice, put the milled puree through a fine strainer.
    Add more salt to taste.
    Chill.
