Mushrooms With Parsley And Garlic(Funghi Triffolati) - cooking recipe

Ingredients
    1 1/2 lb. fresh mushrooms
    1/4 c. olive oil
    3 cloves garlic
    1/2 tsp. red crushed pepper
    salt and pepper to taste
    4 sprigs parsley
    1/4 c. olive oil
Preparation
    Clean,
    wash
    and
    dry
    mushrooms thoroughly.
    Cut each mushroom
    in
    half and parboil for 2 minutes in boiling water. Drain
    well.
    Heat oil in large skillet and add garlic.
    Saute garlic until very brown, discard garlic and add mushrooms, hot pepper,
    salt
    and
    parsley.
    Cook
    over
    high
    heat
    browning mushrooms
    slightly, about 10 minutes.
    Lower heat and cook an additional 10 to 15 minutes.
    Makes 6 servings.
