Shrimp And Corn Soup - cooking recipe

Ingredients
    1/3 c. oil
    3 Tbsp. flour
    2 medium onions, chopped
    1 large bell pepper, chopped
    2 lb. medium shrimp, peeled
    2 Tbsp. parsley
    salt and pepper to taste
    1 (1 lb.) can whole, peeled tomatoes (undrained)
    2 (1 lb.) cans whole kernel corn (drain 1/2 liquid)
    1 can Ro-Tel tomatoes
    1 c. water
Preparation
    Make a roux with oil and flour.
    When roux is golden brown, add onions.
    Cook 15 minutes.
    Add bell pepper, shrimp, parsley, salt and pepper.
    Simmer 10 minutes.
    Add whole tomatoes, Ro-Tel, corn and 1 cup of water.
    Simmer at least 1 hour, adding water gradually until desired consistency.
