Mom'S Mexican Rice - cooking recipe

Ingredients
    1 1/2 c. rice, rinsed and dried on paper plate
    1/3 c. oil
    1/4 c. onion, chopped
    1/4 green pepper, cut in strips
    1 tsp. garlic
    1 tsp. salt
    1 tsp. comino
    dash of black pepper
    dash of oregano
    1 c. canned tomatoes, chopped
    4 c. water
Preparation
    Heat oil on high in large skillet.
    Add rice and toast it. Keep stirring until toasted, then add onion and green pepper.
    Keep stirring.
    Add spices, then mix in tomatoes and water.
    Cover, but not all the way.
    Keep it on high all the time; let it boil until all the water is absorbed.
    Makes 8 servings.
