Kay'S Casserole - cooking recipe
Ingredients

1 c. chopped onions
2 c. chopped celery
2 Tbsp. butter, margarine or chicken fat
1 (2 oz.) can pimentos, chopped
3 c. chopped, cooked chicken
3 c. cooked rice, cooked in chicken broth
3/4 c. chicken broth
1 (10 3/4 oz.) can condensed cream of mushroom soup
salt and pepper
2 c. grated Cheddar cheese
Preparation

Cook onions and celery in butter until tender, but not brown. Stir in mushrooms, pimentos, chicken and rice.
Blend broth and soup.
Stir into chicken mixture.
Add salt and pepper to taste.
