Sunshine Fruit Bars(Low-Fat) - cooking recipe

Ingredients
    1 1/2 c. Quaker Quick oats
    1 c. flour
    1/2 c. firmly packed brown sugar
    1/2 tsp. baking soda
    1 tsp. cinnamon
    1/4 tsp. salt (optional)
    1 c. orange juice
    1/4 c. canola or other vegetable oil
    1/4 c. Egg Beaters or 2 egg whites
    1 tsp. vanilla
    1 (6 oz.) pkg. diced, dried mixed fruit (no nuts or coconut)
    1/4 c. additional diced, dried apricots (enhances flavor)
Preparation
    Heat oven to 375\u00b0.
    Spray a 13 x 9-inch baking pan with nonstick cooking spray.
    Combine dry ingredients.
    Add juice, oil, egg product and vanilla.
    Mix well; stir in fruit.
    Spread into prepared pan.
    Sprinkle with 2 tablespoons of oats.
    Bake 20 to 22 minutes or until lightly browned and edges pull away from sides of pan.
    Cool completely.
    Cut into bars.
