Ingredients

4 large onions
1 Tbsp. flour
2 1/2 oz. butter
2 pt. beef stock
salt and pepper
grated Gruyere cheese
breaded croutons
Preparation

Place finely sliced onions in pan together with butter; stir and cook over low heat until onions are golden brown.
Add flour; continue to stir until flour is blended with butter and onions. Continue to cook about 3 minutes, then gradually stir in beef stock, blending with the rest.
Add salt and pepper.
Cover the pan and cook for 20 minutes.
When ready to serve, pour into bowls and top with slices of French bread, sauteed in butter.
Sprinkle with grated Gruyere cheese and place in a hot oven or under a broiler to brown cheese.
Serves 4.
