Meatless Spaghetti Sauce - cooking recipe

Ingredients
    4 medium onions, chopped
    1 green pepper, chopped
    6 c. spaghetti sauce (three 16 oz. jars)
    1/3 c. wheat germ
    1/2 c. soy grits (optional, if omitted, add a little more wheat germ)
    2/3 c. Parmesan cheese
    2 Tbsp. chopped parsley
    1 lb. extra thin spaghetti
    extra grated Parmesan cheese
Preparation
    Cook onions and green pepper in oil until soft.
    Add sauce, wheat germ, soy grits, cheese and parsley.
    Simmer several minutes until hot, stirring often.
    Cook spaghetti about 7 minutes, but do not overcook.
    Drain well.
    Spoon over spaghetti.
    Be generous. Top each portion with extra cheese.
    Serve with a salad and whole wheat or rye bread for a tasty change.
