Shrimp Chowder - cooking recipe
Ingredients

4 large onions, peeled and sliced
1/4 c. butter or margarine
1 c. boiling water
6 medium potatoes, pared and cubed
1 Tbsp. salt
1/2 tsp. seasoned pepper
1 1/2 qt. milk
2 c. (1/2 lb.) grated process sharp Cheddar cheese
2 lb. raw shrimp, shelled and deveined
3 Tbsp. snipped parsley
Preparation

About 1 hour before serving: In Dutch oven, saut onion slices in hot butter or margarine until tender. Add boiling water, then potatoes, salt and seasoned pepper. Simmer, covered, for 20 minutes or until potatoes are tender; do not drain. Meanwhile, heat milk with cheese until cheese has melted and milk is hot; do not boil. Add shrimp to potatoes and cook until they turn pink, about 3 minutes. Add hot milk and cheese mixture. Heat, but do not boil; sprinkle with parsley. Makes 8 servings.
