1 c. sugar
1/4 c. lemon juice
2 eggs
1 egg white
1 1/2 tsp. grated lemon peel
1 tsp. vanilla
2 3/4 c. flour
1/2 c. chopped toasted pecans
1 tsp. baking soda
1/2 tsp. salt
1 Tbsp. flour
Preparation

Heat oven to 375\u00b0.
Spray cookie sheets with no-stick cooking spray.
In small mixer bowl combine sugar, lemon juice, eggs, egg white, lemon peel and vanilla.
Beat at medium speed, scraping bowl often, until well mixed (1 to 2 minutes).
By hand, stir in all remaining ingredients except 1 tablespoon flour.
Sprinkle large piece of aluminum foil with 1 tablespoon flour.
With floured hands, shape dough into 2 (12 x 2-inch) logs on prepared foil. Place logs on prepared cookie sheets 4 inches apart.
Flatten logs slightly.
Bake 20 to 30 minutes or until lightly browned and firm to the touch.
Cool on wire cooling rack about 10 minutes.
