Mississippi Caviar - cooking recipe

Ingredients
    2 (15 oz.) cans black-eyed peas
    2 small onions, thinly sliced
    cracked pepper to taste
    1/4 c. wine vinegar
    1/2 tsp. salt
    1 clove garlic, minced
    1 c. vegetable oil
Preparation
    Rinse black-eyed peas and drain.
    Layer peas with onion slices in\tbowl,
    sprinkling
    each
    layer with cracked pepper. Process vinegar,
    salt, garlic and vegetable oil in blender at high speed for
    3
    minutes, or until well blended.
    Pour over peas and onions.
    Chill
    for
    2
    hours
    or
    2
    weeks.
    Flavor improves after several days.
    Yields 50 servings.
