Ham And Potato Bake - cooking recipe

Ingredients
    1 c. chopped onion
    1 c. chopped green pepper
    3 tsp. butter
    3 tsp. flour
    1/2 tsp. salt
    1/8 tsp. pepper
    3 c. milk
    2 c. shredded Cheddar cheese
    1 Tbsp. Dijon mustard
    1 (2 lb.) bag cottage style frozen potatoes
    1 (1 lb.) bag frozen baby carrots
    1 lb. canned vacuum sealed ham, cut in 1/2-inch cubes
Preparation
    Butter 2 (6-cup) casseroles.
    Saute onion and pepper until soft, not brown.
    Stir in flour, salt and pepper.
    Add milk; simmer until thickened, stirring, approximately 2 minutes.
    Stir in 1 cup cheese and mustard.
    Cook, stirring until cheese is melted.
    Remove from heat.
    Fold in potatoes, carrots and ham. Pour into casserole.
    Cover each with foil.
    Bake in preheated hot oven (425\u00b0) for 30 minutes.
    Remove foil; sprinkle with remaining cheese.
    Bake, uncovered, 15 minutes more.
    Serves 8 to 12, or use 1 and freeze the other for later.
