Diabetes Chocolate Souffle - cooking recipe

Ingredients
    1/4 c. fructose*
    3 Tbsp. cornstarch
    3 Tbsp. imported cocoa powder (unsweetened)
    1 tsp. instant coffee
    1/4 tsp. cinnamon
    1 can evaporated skim milk
    1 tsp. vanilla
    2 egg whites
Preparation
    Combine fructose, cornstarch, cocoa powder, instant coffee and cinnamon in a 2-quart saucepan.
    Add milk and cook over medium heat, stirring constantly until mixture comes to a boil and thickens.
    Add vanilla.
    Pour into a 1-quart bowl and cover surface of pudding with waxed paper to prevent \"skin\" formation. Chill for 1 hour.
    Beat egg whites until stiff.
    Fold into chocolate mixture until fully incorporated. Spoon into individual 4 ounce dessert dishes.
    Makes 4 servings.
