Sweet Potato Surprise Cake - cooking recipe

Ingredients
    1 1/2 c. cooking oil
    4 eggs, separated
    2 1/2 c. flour
    1/4 tsp. salt
    1 tsp. cinnamon
    1 tsp. nutmeg
    1 1/2 c. grated raw sweet potato
    1 c. chopped nuts
    2 c. sugar
    4 Tbsp. hot water
    3 tsp. baking powder
    1 tsp. vanilla
    coconut frosting
Preparation
    Combine oil and sugar; beat until smooth.
    Add egg yolks and beat well.
    Add water and then dry ingredients that have been sifted together.
    Stir in potatoes, nuts and vanilla.
    Beat well. Beat egg whites until stiff and fold into mixture.
    Turn into 3 (8-inch) greased and floured layer cake pans.
    Bake in 350\u00b0 oven for 25 to 30 minutes.
    Frost with coconut frosting.
