Ingredients

2 c. crushed canned pineapple
3 1/2 c. sugar
1/2 c. pectin
3/4 tsp. mint flavoring
green food coloring to give desired tint
juice of 1 lemon
2 tsp. grated lemon rind
Preparation

Mix fruit and sugar, stir well and bring to boiling point. Cook hard for 1 minute.
Add coloring.
Take from stove and add pectin.
Skim well and allow to cool, stirring often.
Add flavoring and put into jars.
This is excellent served with roast lamb.
