Duchess Potatoes - cooking recipe
Ingredients

2 c. hot mashed potatoes
2 Tbsp. butter
1/2 tsp. salt
2 eggs
Preparation

Combine the mashed potatoes, butter and salt with beaten egg yolks and form into balls, hearts or other shapes (a pastry bag may be used). Place in a greased baking dish and brush over with beaten egg whites. Brown in a hot oven. Serves 4 to 6.
