Mango Ginger Parfaits - cooking recipe

Ingredients
    1 gal. vanilla ice cream
    6 oz. fresh mango puree
    1 Tbsp. cumquat juice
    2 Tbsp. candied or crystallized ginger, finely chopped
    whipping cream (as garnish)
    fresh mango slices (to garnish)
Preparation
    Directions to Make Mango Ice Cream:
    Soften vanilla ice cream. Add mango puree and cumquat juice.
    Place in mold and freeze 2 hours.
    Unmold and place in blender and add ginger.
    Return to mold and refreeze.
