Southern Fried Chicken - cooking recipe
Ingredients

1 fryer, cut into serving pieces
seasoned salt
pepper
all-purpose flour, seasoned with salt, pepper and cayenne pepper
vegetable shortening (Crisco, melted to depth of 1/3 to 1-inch in skillet)
3 Tbsp. bacon drippings or unsalted butter
Preparation

Salt and pepper chicken pieces generously.
Place flour in paper sack, then toss chicken pieces in flour sack.
Heat shortening and bacon drippings in heavy skillet (cast-iron is best) over medium-high heat until water drop sizzles.
Add chicken, being careful not to overcrowd.
Cook, covered, about 15 minutes or until brown creeps up the side of the chicken. Remove cover, turn chicken and continue to cook until browned, about 15 minutes. Drain, uncovered, on paper towels.
