Rabbit Mediterranean - cooking recipe
Ingredients

2 rabbits, cut up
1 c. flour
salt and pepper
3 to 4 tsp. olive oil
1/2 c. sliced onion
4 garlic cloves, sliced
1 (13 oz.) can tomato sauce
3 bay leaves
3/4 c. red wine
1/4 c. green olives
1/4 c. black olives
Preparation

Place rabbit pieces in bag with flour, salt and pepper.
Saute onion in oil until soft.
Push aside, add rabbit and brown on all sides.
Add garlic, tomato sauce, bay leaves and red wine. Simmer, covered, for 45 minutes.
Add olives and continue simmering until meat is tender.
If sauce does not thicken, mix a little flour and water; stir in.
Serve over rice.
Serves 4.
