Applesauce-Walnut Cake - cooking recipe
Ingredients

1 c. applesauce
1/2 c. honey
1/2 c. oil
2 large eggs
1 c. unbleached flour
1 c. whole wheat pastry flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. each: cloves, nutmeg and ginger
1 c. chopped walnuts
Preparation

Mix together applesauce, honey and oil in a large bowl. Separate eggs and beat in yolks.
Mix flours, baking powder, salt and spices in another bowl.
Combine with applesauce mixture and nuts.
Beat well for several minutes; then beat egg whites stiff and fold into batter.
Spoon into a well-greased 9-inch square baking dish and bake in a preheated oven for 35 to 40 minutes, or until a toothpick inserted into center comes out clean.
Serve warm or cold.
