Ingredients

2 Tbsp. brown sugar
1 Tbsp. cornstarch
1/4 tsp. salt
1 c. pineapple chunks and syrup
1 Tbsp. butter
1 Tbsp. lemon juice
2 c. beets, cooked and sliced
Preparation

Combine brown sugar, cornstarch and salt in medium saucepan. Stir in pineapple chunks and syrup.
Heat, stirring, until mixture boils and thickens.
Stir in butter, lemon juice and beets.
Heat, stirring, about 5 minutes, until heated throughout.
Makes 4 servings.
