Chicken With Cornmeal Dumplings - cooking recipe

Ingredients
    1 chicken, cut up
    2 onions, sliced
    1 tsp. salt
    dash of pepper
    2 tsp. baking powder
    2 carrots, sliced
    2 c. cornmeal
    2 eggs
    2/3 c. milk
Preparation
    Put chicken and giblets in Dutch oven. Add carrots, onions and salt (to taste).
    Cover with water and bring to a boil.
    Reduce heat and simmer 1 1/2 hours.
    Mix cornmeal, 1 teaspoon salt and baking powder. Beat eggs and milk together and add to cornmeal mixture until dough is stiff.
    Add more cornmeal, if necessary. Remove chicken from broth, but keep warm. Drop dough by spoonful into boiling broth. Cover lightly and simmer 15 minutes.
    Serve together.
