Rice Pudding - cooking recipe

Ingredients
    3 eggs, well beaten
    1 c. regular rice, cooked and set aside (will be 3 to 4 c.)
    1 c. sugar
    1 stick butter or margarine
    1 c. milk
    1 1/2 Tbsp. vanilla
    1 c. raisins (optional)
Preparation
    Cook rice in 2 cups of boiling water. Cover and simmer 10 minutes. Stir in 1/2 stick of the butter; set aside. Beat eggs, sugar, milk, vanilla and rest of butter and add to rice; mix well. Add raisins, if desired. Pour into 2-quart casserole dish. Bake in preheated oven at 350\u00b0 for 45 to 50 minutes or until lightly browned. Delicious served either hot or cold. Makes 8 servings. Preparation time: 1:00
