Shrimp And Rice Salad - cooking recipe

Ingredients
    2 c. white rice
    1/4 c. oil
    1/3 c. white vinegar
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. tarragon
    1/2 medium green pepper, minced
    1/2 c. parsley, minced
    1/2 c. green onion, minced
    1 c. peas
    1 lb. baby shrimp
    1/2 c. sliced ripe olives
Preparation
    Cook rice and peas.
    While rice is hot, add oil, vinegar, salt, pepper and tarragon.
    Toss slightly; cool, then add peppers, parsley, green onions, peas, shrimp and olives.
    Mix and cover bowl.
    Refrigerate when ready to serve; top with watercress sprigs.
