Carrot Cake - cooking recipe

Ingredients
    2 c. sugar
    3 c. flour
    1 tsp. soda
    1/2 tsp. salt
    1 tsp. ground cinnamon
    2 c. coarsely grated carrots
    1 1/3 c. salad oil
    2 eggs, beaten
    1 c. chopped nuts
    1 can mandarin oranges, drained
    1 tsp. vanilla extract
    1 tsp. lemon extract
    1/2 tsp. almond extract
Preparation
    Combine dry ingredients in large mixing bowl.
    Add carrots, salad oil and eggs.
    Beat until well mixed.
    Add other ingredients and stir.
    Put batter in two large or three small loaf pans or two 9-inch cake pans which have been oiled and floured.
