Oven Fried Chicken - cooking recipe

Ingredients
    2 chickens, cut up
    1/2 c. shortening
    1 c. sliced onion
    1 c. diced celery
    6 Tbsp. flour
    3 c. milk
    1/4 tsp. each: thyme and sage
    2 to 3 tsp. salt
    pepper
Preparation
    Dip chicken in egg and small amount of water mixture; dredge in flour, flour/cornmeal mix or cracker crumbs.
    Fry in shortening and place in casserole.
    Add onion and celery to remaining shortening.
    Cook over low heat until soft and lightly brown. Stir in flour; slowly add milk and stir until thick and smooth. Add seasonings.
    Pour gravy over chicken; cover and bake at 325\u00b0 for about an hour or until chicken is tender.
