Mexican Casserole - cooking recipe

Ingredients
    1 packet taco mix
    2 boneless chicken breasts
    6 to 7 stems chopped scallions
    2 stalks chopped celery
    2 sticks chopped carrot
    1 chopped green bell pepper
    6 diced plum tomatoes
    3 to 4 cloves minced garlic
    1 to 2 minced jalapenos
    10+ sliced black olives
    2 Tbsp. olive oil
    1 Tbsp. (dry or fresh) cilantro
    20 to 30 tortilla chips
    3 oz. shredded Cheddar or Jack cheese
Preparation
    Add 3/4 cup of wine or water to taco mix in a frying pan. Saute diced chicken strips in pan with taco seasoning for about 20 to 25 minutes or until sauce thickens.
