Easy Chicken Marengo - cooking recipe
Ingredients

6 boneless and skinless chicken breasts, 1 1/2 to 2-inch squares
1/2 c. all-purpose flour
1/2 tsp. salt
2 Tbsp. unsalted butter
1/2 c. dry white wine
2 c. drained and chopped canned tomatoes
12 mushrooms, sliced
1 (2.2 oz.) can sliced, pitted black olives
1 dried tarragon
1/2 tsp. pepper
2 Tbsp. olive oil
1 small clove garlic
salt and pepper to taste
freshly chopped parsley (garnish)
Preparation

Preheat oven to 350\u00b0.
Combine flour with tarragon, salt and pepper. Dip chicken pieces in seasoned flour to coat on all sides. Heat butter and oil in large skillet; brown chicken pieces, a few at a time, until golden.
Remove to an ovenproof casserole.
Add wine to skillet and deglaze by scraping up brown particles from the bottom of the pan.
Add tomatoes, mushrooms, olives and garlic.
Stir to combine.
Pour sauce over chicken pieces and cover.
Place in oven and bake for 35 to 40 minutes.
