Microwave Rice Pudding - cooking recipe

Ingredients
    3/4 c. sugar
    2 Tbsp. cornstarch
    1/2 tsp. salt
    2 c. milk
    2 egg yolks, slightly beaten or 1 egg, well beaten
    2 Tbsp. butter
    1 tsp. vanilla
Preparation
    In a 1-quart casserole dish, blend together sugar, cornstarch and salt.
    Gradually stir in milk and mix well.
    Microwave on High for 5 to 7 minutes.
    Stir every 3 minutes until mixture is smooth and thickened.
    Stir in a small amount of hot pudding mix into beaten egg.
    Pour egg mixture into hot pudding and mix well. Microwave on Medium-high for 1 to 3 minutes.
    Stir after 1 minute. Add butter and vanilla.
    Stir until butter is melted.
    Add 2 cups cooked rice to pudding.
