Lentil Delight - cooking recipe

Ingredients
    4 Tbsp. oil
    1/2 c. onion
    1 c. lentils, soaked overnight
    1/2 c. diced celery
    1/2 c. diced bell pepper
    1 c. chopped mushrooms
Preparation
    Saute onion, celery and bell pepper over low heat.
    Add lentils and mushrooms.
    Simmer, covered, stirring frequently, until lentils are fully tender.
    Serve with rice (try brown rice) or as a side dish.
