Easy Cheesecake - cooking recipe

Ingredients
    1 envelope unflavored gelatin
    1 c. cold water
    2 (8 oz.) pkg. softened cream cheese
    1/2 c. sugar
    1 (9-inch) graham cracker crust
    1 tsp. vanilla (optional)
Preparation
    In a small saucepan, sprinkle gelatin over 1/4 cup cold water; let stand 1 minute.
    Stir over low heat until gelatin is completely dissolved.
    In a large bowl, beat cream cheese, sugar and vanilla until blended.
    Gradually put in gelatin mixture and remaining water until smooth.
    Pour into crust and chill until firm.
    Garnish with fruit if desired.
    (Okay to use light cream cheese; can use artificial sweetener instead of sugar.)
