Orange Roughy With Creamy Mushroom Sauce - cooking recipe

Ingredients
    1 1/2 c. sliced fresh mushrooms
    3/4 c. chopped onion
    1/8 tsp. pepper
    1/4 c. grated Parmesan
    1 c. plain low-fat yogurt (at room temperature)
    4 (4 oz.) orange roughy or other whitefish fillets
    2 Tbsp. dry breadcrumbs
    paprika and parsley (optional)
    vegetable cooking spray
Preparation
    Coat a large nonstick skillet with cooking spray; place over medium heat until hot.
    Add the next 3 ingredients; saute for 3 minutes.
    Set aside and cool.
    Combine mushroom mixture, cheese and yogurt in a bowl; stir well.
    Place fillets in an 11 x 7 x 2-inch baking dish.
    Top with mushroom mixture; sprinkle with breadcrumbs.
    Bake, uncovered, at 350\u00b0 for 30 minutes, or until fish flakes easily when tested with a fork.
    Garnish with paprika and parsley, if desired.
