Polynesian Chicken Salad - cooking recipe
Ingredients

2 c. cooked chicken, cut in small pieces
1 1/2 c. diced celery
1 1/2 c. diced canned pineapple or seedless grapes
1/4 c. shredded carrot (not grated)
1/2 c. toasted almonds halves
1/2 c. mayonnaise
1/4 c. sour cream
1 t. curry powder
1 t. freshly squeezed lemon juice
1/2 t. salt
Preparation

Combine chicken, celery, pineapple or grapes, carrots and almonds.
Blend mayonnaise with sour cream and other seasonings. Pour over chicken and toss lightly.
Chill thoroughly.
Arrange on salad greens and garnish with minced parsley.
