Canton Chicken - cooking recipe

Ingredients
    2 1/2 or 3 lb. boneless skinless chicken breasts
    1 (10 oz.) jar apricot preserves
    1/4 c. soy sauce
    1/4 c. sherry
    1/4 c. finely chopped onions
    2 Tbsp. cornstarch
Preparation
    Place chicken in 12 x 8 inch baking dish.
    Combine remaining ingredients; pour over chicken.
    Bake at 325\u00b0 for 1 hour, turning occasionally.
    Serve with fluffy rice and tossed greens.
    Very simple.
