Hawaiian Haystacks - cooking recipe
Ingredients

4 c. seasoned chicken broth
1/4 c. cornstarch
2 to 3 c. cooked and cubed chicken or turkey
4 c. hot cooked brown rice
4 medium tomatoes, chopped
1 (10 oz.) pkg. frozen petite peas, thawed
5 stalks celery, finely diced
1 to 2 green peppers, chopped
6 to 8 green onions, sliced
1 (8 oz.) can unsweetened crushed pineapple
1/2 c. slivered almonds or sunflower seeds
1/2 c. shredded coconut
1 c. raisins
1/2 c. water chestnuts, sliced
1 to 2 c. Chinese noodles (optional)
1 c. finely grated Cheddar cheese
Preparation

Combine broth and cornstarch.
Cook until thick and clear. Add chicken.
Place remaining ingredients in individual bowls. Have guests build their own stack in the following order:
rice, chicken in gravy, tomatoes, peas, celery, green pepper, onions, pineapple, almonds, coconut, raisins, water chestnuts, noodles and cheese.
Yields 6 to 8 servings.
