Flowlyn Cymreig(Welch Chicken) - cooking recipe

Ingredients
    1 chicken
    1/2 lb. bacon (lean)
    1/2 lb. carrots
    2 large leeks
    1 small cabbage
    1 1/4 c. stock
    butter
    mixed herbs, salt and pepper
Preparation
    Cut the bacon and carrots into small pieces and fry in butter until just brown.
    Put the chicken on top of this in a heavy pan with leeks, herbs and seasoning.
    Pour in stock, dot chicken with butter.
    Cover and simmer for 2 to 3 hours for a boiling chicken, less for a roasting chicken.
    Cook cabbage separately and make a bed of it on which to serve the chicken surrounded by the vegetables.
    Boil stock, thicken with 1 ounce flour and 1 ounce butter and pour around chicken or serve separately.
