Dutch Oven Enchiladas - cooking recipe
Ingredients

4 chicken breasts, cooked and cubed
1 onion, chopped
1 green pepper, chopped
2 cans diced green chilies
1 pkg. corn or flour tortillas
1 can black olives, chopped
1 lb. Monterey jack cheese, grated
1 can enchilada sauce
1 can cream of chicken soup
6 oz. sour cream
Preparation

Mix together chicken, onion, green pepper, and 1 can of chilies.
Fill tortillas with mixture and some cheese.
Roll up and place in lightly greased Dutch oven.
Mix together enchilada sauce, soup, and sour cream.
Pour over tortillas.
Top with remainder of grated cheese, olives, and chilies.
Cover and bake in 350 degree oven for 45 minutes.
