Ingredients

2 c. hot mashed potatoes (mashed with milk and butter)
2 1/2 c. sugar
2 c. buttermilk
3 eggs lightly beaten
2 Tbsp. melted butter
2 tsp. soda
1 tsp. nutmeg
1/2 tsp. salt
6 1/2 to 7 self rising flour
cooking oil
Preparation

In a large bowl combine potatoes, sugar, buttermilk and eggs. Stir in butter, soda, nutmeg, salt and enough flour to form a soft dough. Turn onto a lightly floured surface and pat to 3/4 inch thickness. cut with a 2 1/2 inch floured doughnut cutter. Using an electric skillet, heat one inch of oil to 350 degrees. Fry the doughnuts for 2 minutes per side or until brown. Drain on paper towel.
