Carrot-Pineapple Delight - cooking recipe
Ingredients

1/2 c. sugar
1 1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/8 tsp. salt
1 large egg
1 c. carrot, shredded
1/2 c. canned pineapple in juice
1 Tbsp. vegetable oil
1 tsp. vanilla extract
Preparation

Sift together into a mixing bowl sifted all-purpose flour, sugar, baking powder, baking soda, ground cinnamon and salt.
Add oil, egg, finely shredded carrots, crushed pineapple with juice and vanilla.
Mix until moistened; beat 2 minutes at medium speed on electric mixer.
Spray an 8 x 8 x 2-inch baking pan with nonstick spray coating.
Pour batter evenly into pan.
Bake in a 350\u00b0 oven for 20 to 25 minutes or until a toothpick inserted near the center of the cake comes out clean.
Cool on wire rack.
Frost with Light Cream Cheese Topping.
Yields 9 (2-ounce) servings.
