Blueberry Cheese Pie(Serves 8) - cooking recipe

Ingredients
    6 oz. cream cheese
    2 eggs
    2 Tbsp. heavy cream
    1 tsp. grated lemon rind
    4 c. blueberries (fresh or frozen)
    1 pie crust
    1 Tbsp. lemon juice
    1/4 c. apple juice
    1 c. sugar
    2 Tbsp. cornstarch
Preparation
    Preheat oven to 350\u00b0 (180\u00b0C).
    Soften cream cheese.
    Beat the eggs.
    Beat in the cream cheese.
    Add the cream.
    Fold in lemon rind and 2 cups of blueberries.
    Pour into pie shell.
    Bake in oven 30 minutes.
    Remove.
    In saucepan, add the 2 cups of blueberries, lemon juice, apple juice, sugar and cornstarch. Blend thoroughly.
    Heat over low heat until mixture thickens. Pour on top of pie.
    Chill 3 hours.
