Lemon Meringue Pie - cooking recipe
Ingredients

1 prepared pie crust, baked
1 c. white sugar
4 level Tbsp. cornstarch
1/4 tsp. salt
1 1/2 c. water
2 egg yolks, beaten slightly
1/3 c. lemon juice
grated rind of 1 lemon
Preparation

Sift the dry ingredients into the top of a double boiler; add the water and egg yolks.
Stir until dissolved.
Cook mixture over hot water in the double boiler, stirring frequently, until thick, about 15 minutes.
Add the lemon juice and grated rind; mix well. Cool.
Pour into pie shell and top with your favorite meringue made with the two egg whites.
Brown in oven.
Cool and serve.
