Duck Gumbo - cooking recipe
Ingredients

2 ducks, well-cooked and boned (I use more ducks, but 2 will do)
1 1/2 sticks oleo
1 c. flour
2 qt. duck broth
4 medium-sized onions, chopped fine
1 small bunch celery, chopped fine
1 large or 3 small bell peppers, chopped
3 cloves garlic
1 bunch green onions (tops included), chopped
1 (5 oz.) can tomato paste
2 (No. 2) cans tomatoes
2 tsp. Accent
2 Tbsp. dry parsley
1 tsp. oregano
1 tsp. thyme
2 Tbsp. salt
1 Tbsp. black pepper
2 Tbsp. gumbo file
1/2 to 1 tsp. red pepper (depending on taste)
Preparation

Mix all together in a large pot and simmer approximately 2 hours, stirring often.
Serve over rice.
