Porcupine Meatballs - cooking recipe
Ingredients

1 can tomato soup
1 lb. ground beef
1/4 c. uncooked rice
1 egg, slightly beaten
1/4 c. minced onion
2 Tbsp. minced parsley
1 tsp. salt
2 Tbsp. shortening
1 small clove garlic
1 c. water
Preparation

Mix 1/4 cup tomato soup with the ground beef.
Add the rice, egg, onion, parsley and salt.
Shape into meatballs about 1 1/2-inches in diameter.
Brown in the shortening with the minced garlic.
Blend in the rest of the can of soup and the water. Cover.
Simmer about 40 minutes or until the rice is tender, stirring now and then.
